Winter is Coming!

Well, it has been getting colder and colder, the past week or more. The other morning, there was quite a bit of frost on the ground in the morning. I snapped a quick pic since it was so pretty.

This morning the animal waters were frozen pretty solid. There was about a half inch of solid ice on the tops of all of them. The sun is out today but, there is a crispness in the air. Thankfully, we insulated most of the animal shelters several weeks ago.
The garden is at it's end. There are still some turnips, beets and radishes growing out there. I was hoping to clear out all of the other beds and maybe throw some kind of cover crop on them for the winter. We will see what we get done today . . . or not.

Zucchini Marmalade

     I found this recipe one day as I was surfin' around the internet trying to come up with creative ways to use all of the 18" zucchinis that are coming out of the gardens around here. I'm not a big fan of cooked zuc so, I set out a recipe quest. Well, I'm the kind of person that will try to make salsa out of just about any fruit or veggie - last year we tried cucumber salsa, blueberry salsa and even blackberry salsa. This year, I found zucchini salsa (that's another post in the makes) and then turned up this recipe.      This stuff is the bomb! What a great recipe this is - it uses up those huge zukes that grow so easily in just about any home garden AND  it gets another veggie into the belly of it's eater. Legalized Horse Slaughter

   Obama has shocked me, that's for sure. With his decision to legalize horse slaughter on November 18, 2011, he has gained a brownie point in my book. I know some folks out there will be freaking out about eating horse but, think about it for a minute . . . since when did you want the government telling you what you can and cannot eat? FREEDOM is what America is suppose to be about and part of that freedom is being able to live in a country where we have choices in regards to our life.
